[00:07.64]It brings flavors from the Southeast Asian island's mix of Malay, [00:12.76]Chinese, Indian and other cultures to an American food court. [00:18.24]Urban Hawker, in midtown Manhattan, [00:21.96]has 17 food sellers that were chosen by KF Seetoh, [00:26.76]the food center's curator. [00:29.44]Eleven of the sellers come directly from Singapore. [00:33.56]Each seller has a well-known dish such as crab chili, [00:38.12]oyster omelet, Hainanese chicken rice [00:41.56]or nasi lemak, a rice dish. [00:44.36]Seetoh said, "I came across Singaporeans [00:48.24]who had been living in the United States in New York [00:51.36]for like 20, 30, 35 years, [00:54.84]and they still miss Singapore food." [00:57.80]He added, "Street food in Singapore [01:00.88]is not something you burn or deep fry. It's fairly complex. [01:05.32]They take six hours just to prepare a meal [01:08.44]to get it ready at 10 a.m. or 11 a.m." [01:12.68]The idea for the food hall was born when Seetoh met [01:16.08]the famous U.S. cook Anthony Bourdain in 2013 [01:20.48]at a street food event in Singapore. [01:23.60]Bourdain liked the idea of a cooked food center, [01:27.36]also called a hawker center, in New York. [01:30.92]Seetoh later discussed the idea with Eldon Scott, [01:35.00]president of Urbanspace. [01:37.24]Scott, a property manager [01:39.72]who curates public markets, quickly agreed. [01:43.84]"The amazing thing about him saying yes [01:46.36]was that he's never been to Singapore," Seetoh said. [01:50.92]Seetoh hopes that this hawker center [01:53.56]will be the first of many in the U.S. [01:56.56]"It's just like exporting grandmother's deliciousness, [02:00.40]the food that I grew up with," he said. [02:04.16]Magdalene Sim, a Singaporean, [02:06.84]said on social media about the new hawker center: [02:10.40]"Food was good but something [02:12.40]was missing without plastic plates, [02:14.56]cutlery, and sweltering heat." [02:17.08]Sweltering is a term that means very hot. [02:21.44]Sim added that the lines of people "were the same though." [02:25.04]Julie Lee, on her third visit, [02:28.36]praised Hainan Jones' chicken over rice. [02:31.72]"Everyone should give it a try. [02:34.12]So much flavor, so tender," she said.
